You may wanna explore some more caelid. Both of these wepons are really good but eleonora's poleblade is an arcane wepon so you'd probably had to respec. Bloodhound is an entirely different sort of weapon than Poleblade. One is a Quality Str/Dex while the other is Dex/Arc. Bloodhound gains nothing from Arc.
Crazy damage and a very good boss weapon with a move set that compliments bleed damage nicely. Yes the peeler as main and poleblade in off will do more stagger advantage and proc bleed faster....this is assuming we are only attacking with jumping L1s which I assume anyone with this set up is doing just that....atleast to start a fight. 1 jumping L1 usually breaks even the toughest enemies guard then bleeds them.
