I had a 507c in red, set to a 2 MOA dot only, manual brightness. My (former) carry Glock 19 MOS Gen 5 also had a 507c, with 30% cowitness black steel BUIS from Ameriglo. My (former) dot on my P365X was a 407k, with a 6 MOA dot. For BUIS, I left the factory Sig sight on the front and used the optic body as a rear sight, for backup.

I have a P365 X-Macro "TACOPS" assembled from parts, equipped with a Holosun EPS Carry MRS. I have the old style slide, so no rear sight, as it came off with the plate. The original Sig XRAY3 front was swapped out for an Ameriglo Orange-Tritium, in stock (same as the XRAY3) height.If so, you will get a lower 1/3 or 1/4 cowitness off the built in rear sights on the EPS Carry and factory normal height front sight. If you are running the newer slide with the independent rear sight, you will need to run suppressor height sights. I’m running the factory X-ray 3 suppressor height sights and they cowitness.

Since SIG uses a combat hold zero for the iron sights, you can't get a full co-witness with the 407K/507K/EPS Carry on the 365 with the stock iron sights.
