You can always get extra hearts with cooking especially durian fruit, radishes and hearty truffle. I recommend he getting at least one stamina vessel at some point in your early game. Most towers (among many other things) can be finished with the starting stamina wheel, but that extra bit makes it much easier.

Only real heart containers can raise the sword from it's pedestal, you can always swap stamina for more hearts at the cursed statue in hateno village to help. Now, while you probably already know by now, you can draw the MS from it's pedestal even if you only had 1/4 of a ♡ container!
